Tommie Sjef Wild Ales is located in Den Helder in the Netherlands, where the owner Tommie Sjef has been making beer since 2014. Tommie fell in love with Belgian lambic during a visit to Antwerp when he was 16 and soon started buying lambic from different breweries in Belgium and started blending them himself. In 2014 he started selling his beers commercially. Now he makes all of his wort himself at different breweries and ferments them on oak barrels with wild yeast and bacteria harvested from the nature around his family home. He uses only organic ingredients for his beer.
